Day One

So, apparently I picked the very worst day to begin this “lifestyle change” (trying not to say diet!). Turns out it’s Teacher Appreciation Week which means there will be delicious free lunch in the lounge all week + little gifts from my students have already started rolling in… The tally so far is two Reese’s cups and a Cold Stone gift card. At least the gift card can wait 30 days.

As for how I am feeling, I have to say I am very excited. I have been wanting to do something like this for ages…and now my health demands it more than ever. I did take some “before” photos this morning but those will never be revealed until a better “after” can counter them! đŸ˜‰ It is nice to have a partner in doing this, and will make it much more manageable.

I know this blog is titled “Jess Goes Paleo” because that is the intent long term. However, I will mention that I am starting with a very strict and specific type of paleo diet for these first 30 days: Whole30. Nothing processed, no sugars, no dairy, no grains, no cheating…you get the point. Brutal!

Food for today! So far I have eaten some egg/veggie cups I had baked a few days ago as well as a banana. Mid-morning snack was supposed to be an apple which I forgot to bring, so will substitute 2 hard boiled eggs I brought instead. Lunch will be a mixed greens salad with compliant dressing, avocado, tomato, and some queen olives. An afternoon snack would be a tomato sliced up with salt, if need be…and for dinner, I have some thin grass-fed pork chops I will grill, along with grilled mushrooms and green beans. Sounds pretty good to me! This is why I don’t say “diet”!

Along with eating healthier, my goal is to drink a gallon of water every day. I am doing pretty well with this so far! I don’t think that will be too much of a problem. So hot here!
